3 meals one chicken
One of my favorite things to do to make a dollar stretch is buying a whole chicken and getting three meals out of it.
We have recently put ourselves in a strict budget for everything.. especially groceries.
I have spent a lot of time trying to figure out how to save money, and time with my shopping.
This week, we did a whole chicken in the crock pot. I roasted it yesterday with carrots (potatoes wouldn't fit with the chicken and the kids love the carrots much more)
It cooked all day in the crock pot making my house smell delish all day.
Today my little Abby girl and I made chicken pot pie. Such a simple recipe and so comfy (I am a huge comfort food freak)
Tomorrow I will be making my husbands favorite ... Chicken and dumplins. He is NOT a huge soup fan. In fact, there are only like 3 that he will eat. Chicken and dumplins being one of them (split pea is another and that is on the menu next week since my mom gave me the hambone from Easter and has been waiting patiently in my freezer since)
So, for 6 dollars I am getting three meals. Of coarse the meals have more added to them. Tonight, I used the roasted carrots but added peas, and corn to the potpie. I also added flour for the top and used some milk but, the meat only cost me 2 dollars!!!!!!
Tomorrow I will use some flour but, other then that it is a 2 dollar meal.
I enjoy feeding my family yummy meals but, I enjoy them more when they are inexpensive to boot! :)
