An old (new) standby

A couple of months ago, I was at a loss as to what to make for dinner. I LOVE my crock pot (I mean LOVE) and I also had some boneless chicken thighs on hand that needed to be eaten. So, I threw them in the crock pot and wasn't sure where to go from there.
I looked in my pantry (which was bare bones) and seen a can of diced tomatoes (this is something I always have on hand in my pantry) and so I poured it in... but, what else? IN my freezer I had a bag of mixed veggies (another staple) got some Italian dressing and threw it all in and let it go~
I had NO clue how it would turn out or if my children or picky (uh I mean conservative eating) husband would eat it.
I dished it up and let no one know that it was a meal that I had patched together.
It received RAVE reviews.
So, the next week, I tried it with boneless pork... guess what? it also was a huge hit.
So, it is now a staple/standby meal. In fact I made it again today because I needed something quick and easy and YUMMY. And, it is very little mess.

Diced tomatoes and mixed frozen veggies have got me out of binds more then once. They always have a home in my pantry/freezer (but now after this, it is a front row seat).

Sounds super yummy. When you say mixed veggies, are you talking peas and carrots and corn, or broccoli, cauliflower, and carrots?

But I will bet broccoli and cauliflower would be YUM too I will have to try it.

Sounds so good! I always keep salsa on hand. It's delicious over chicken in the crock pot. And if I have Campbell's cheese soup, I throw it in too. :) It's really good over rice with steamed broccoli on the side.
