Grateful Challenge and Recipe Tutorial

Yesterday we had something AMAZING happen. We got our dog back that had ran away back in October!
It is a long and insane story but, the bottom line is, HE IS HOME.
So yesterday, on Day 8 I was most grateful for our sweet dog coming home to his rightful owners!

He was happy to be home too! He just let them lay around all over him and hug him up all day! He came right back as if he had never left... well with the exception of this being a completely different house and us now having Storm :)

Day 9

Today we went to the mall with friends. We had a great time and it was nice to get out for a bit for some free fun.
Here the kids throw pennies into the fountain with their friend!

Oh and we did splurge and do the $2.00 hurricane thingy. I hadn't let the kids do it in a couple of years. They got a kick out of it, especially Abigail who, was so little the last time we did it  it was like her first time.

Today I made a simple and yummy dinner. I have NO idea what it is called but, it is so good. A friend had me over for dinner last weekend and this is what their mom made. I liked it so much I got the recipe to make it at home. I am usually not a "cream of  soup " type of cook but, this is a yummy meal, easy and doesn't take much time. I also think that all my kids (well except Gabe who doesn't like anything) will like it.

First you start off with Ritz crackers, Chicken, sour cream, 3 cans of cream of whatever soup and butter.

Boil the chicken

And then shred it. I used my Kitchen Aide to shred my chicken. One of the BEST pinterest tips EVER.

After shredding it, add it to your 9x13

Add your cream of ... soups and the sour cream.

Mix well

Crumble crackers on top. I used two sleeves.

Put butter on the top

Put in the oven

And bake at 350 for 40ish minutes.

TADA... tonights dinner. I put it over top egg noodles but you can do rice, or just plain if you wish
 Yummy, easy and peasy :)
